Harry J's Healthy Snack Ideas

We strive for our campers eat healthy food throughout their day. Eating healthy can promote optimal growth and development of children, according to the Centers of Disease Control and Prevention. Our Executive Chef Will and our cooking instructor Chef Susie always make sure to cook and teach with the freshest ingredients. In honor of National Nutrition Month, we are celebrating by giving you a few snack recipes from “Chef Harry’s,”our official camp cooking studio brought to you directly by Harry J himself! Some “healthy snacks” can be thought of as unappetizing, however, these snacks are so delicious you’ll want to make them again and again. 

Please note that Frogbridge Daycamp is a nut aware facility, which means that we do not serve anything that may contact nuts or are produced somewhere that processes nuts of any kind. For the below recipes with any type of nut or nut butter, please substitute with another ingredient.

Red, White, & Blue Parfait

Parfait

Be patriotic with this fun recipe for a Memorial Day treat this year.

Ingredients:

  1. Vanilla yogurt (can be Greek or regular)
  2. Strawberries, sliced
  3. Blueberries
  4. Rice Krispies

Instructions:

  1. Put two scoops of yogurt into bottom of a cup.
  2. Lay strawberry slices on top of yogurt.
  3. Add another two scoops of yogurt.
  4. Sprinkle blueberries.
  5. Add another two scoops of yogurt.
  6. Top off parfait with Rice Krispies.

Flag Toast

Show your pride in this snack that is not only pretty but tasty too.

Ingredients:

  1. Whole grain toast
  2. Strawberry jelly
  3. Cream cheese
  4. 1 banana, sliced
  5. Blueberries

Instructions:

  1. Spread layer of cream cheese on toast.
  2. Use strawberry jelly to create the red stripes.
  3. Use banana slices to create the white stripes.
  4. Add blueberries to create the space where the stars go.

Apple Cookies

Using an apple slice as the base of this “cookie” will add a crunch and keep the nutritional value.

Ingredients:

  1. 1 apple (type of your choice)
  2. ¼ cup walnuts, chopped
  3. ¼ cup almonds, sliced
  4. ¼ cup smooth peanut butter
  5. ½ cup shredded coconut
  6. ¼ cup chocolate chips

Instructions:

  1. Remove the core of the apple and slice it into thin rings.
  2. Spread peanut butter on top of one side of the ring.
  3. Top with walnuts, almonds, coconut, and chocolate chips.

Impossibly Easy Banana Ice Cream

A healthy type of ice cream that everyone will enjoy.

Ingredients:

  1. 3 large, very ripe bananas (peeled, sliced, and then frozen)
  2. ½ tsp. pure vanilla extract
  3. ½ tsp. cinnamon
  4. Pinch of salt
  5. Fresh chopped fruit of your choice, chocolate chips, coconut flakes (optional)

Instructions:

  1. Remove bananas from freezer and allow to thaw for about five minutes.
  2. In a blender, add bananas, vanilla, cinnamon, and salt and blend until smooth.
  3. Pour mixture into a bowl and mix in additional ingredients if needed.
  4. Serve immediately or add to popsicle molds and freeze for another time.

Sweet Potato Banana Bites

This is a great snack for picky eaters. They won’t even know what they are eating is good for them.

Ingredients:

  1. 1 medium sweet potato, cooked and mashed (about ½ cup)
  2. 1 medium banana, mashed (about ½ cup)
  3. 2 eggs
  4. ¼ cup peanut butter (type of your choice)
  5. Cinnamon, to taste
  6. Dark chocolate chips, sliced fruit, seeds (optional)

Instructions:

  1. Preheat oven to 375°F.
  2. Mix sweet potato and banana together in a small bowl until somewhat smooth.
  3. Add eggs, peanut butter, and cinnamon. Mix until well combined.
  4. Stir in any additional ingredients if needed.
  5. Spoon mixture into greased mini muffin tins. Bake for 18 minutes or until golden brown.
